Recipe: Country Velador's Taffy

¾ cup corn syrup
¼ cup water
2/3 cup sugar
½ teaspoon cream of tartar
1 tablespoon butter
Large pinch salt
Combine corn syrup and water in a saucepan. Add sugar and cream of tartar. Mix together. Add butter. Cook over high heat, slowly stirring until it comes to a boil. Once it comes to a boil, stop stirring and cover with a lid of one minute. Take lid off pot and clip on a candy thermometer.  Add food color, if using.  Cook to 243 F.
Pour out onto buttered marble slab or sheet pan placed on a cooling rack. Sprinkle with salt. Fold with bench scraper to help cool evenly. Add flavor, if using. Once cooled pull until it is firm. Roll into a rope. Cut into desired size. Wrap immediately using candy wrappers.
