Recipe: Southwestern Gazpacho

Chef Matthew Grunwald shares his Southwestern Gazpacho recipe.

1/4 red onion, peeled and chopped
3 Roma tomatoes, quartered
1 teaspoon toasted cumin
1 teaspoon smoked paprika
1 lemon, juiced
1 orange, zested
1 lime, zested
1 Tablespoon salt
1 teaspoon freshly ground black pepper
2 teaspoons low sodium soy sauce
1 Tablespoon hot sauce
1/4 cup water
1 English cucumber, chopped
1/2 red bell pepper, chopped
1/4 cup olive oil
Sliced avocado and jalapeño for garnish

Blend the ingredients in a blender on high until smooth and chill in the fridge 1 hour before serving.

Garnish with avocado and jalapeño.
