Top 5 Thanksgiving cooking mistakes

We asked Eddie Matney, who has been a chef in the valley for almost 30 years, what the top 5 cooking mistakes are on Thanksgiving.

"I think number one has to be the overcooking of turkey," he said.  "The best thing to do is don't roast it whole, deconstruct it."

Matney says if you separate the breast meat, legs and thighs, you won't have to worry about overcooking it.

"It's very easy to take a piece of meat and feel it while it's cooking to see if it's done as opposed to this bird saying 'Am I done.' You know it's not gonna happen."

The second mistake is lumpy gravy.

"If you deconstruct a turkey and you have a carcass, you can have a stock.  You don't have to wait for drippings, you can make your stock that morning and you thicken it with corn starch."

The third mistake: "Starchy mashed potatoes, sticky mashed potatoes."

Matney says the minute your potatoes are done cooking, make them, then reheat.  Leaving potatoes sitting in water will make them sticky.

Another mistake?  Only serving wine at dinner.

"Whatever your people want to drink, let them drink.  If they want to drink margaritas, let them drink margaritas."

And last.."How am I gonna get everything done at the same time?"

Chef Matney says you should always make the side dishes ahead of time, then reheat and if all else fails, his restaurant, Eddie's House, is open on Thanksgiving.

"It's a lot of stress and you know what, that's what we do.  We do food and we do a really good job at it."

A dinner at Eddie's House costs $39 per person.
