Makes 4 portions

Ingredients
1 TBS olive oil
1 tsp minced garlic
½ cup  minced red onion
½ cup  minced shitake mushrooms
½ cup minced bell peppers
½ cup minced yellow squash
½ cup minced zucchini
2 cups blanched lentils
2 cup vegetable stock
4 each 4oz salmon filets
4 pinch chopped dill
4 pinch grated lemon rind
1 pinch pepper
1 TBS olive oil

Method
1. In a very hot pan sauté, add garlic & onion, cook out for a minute, add  the mushrooms , cook out for a minute them add the rest of the minced vegetables

2. Cook out for a minute , then add the blanched lentils & vegetable stock and reduce the volume of the stock by half

3. Season the salmon with the minced dill, pepper and grated lemon rind

4. Heat the olive oil in a sear the salmon on both sides add white wine cover and cook for 4-6 minute
