Quinoa Portabella Burger

Ingredients:
1/2 cup Cooked white kidney beans (any white bean will do)
1/4 cup cooked quinoa (red or white)
1/4 cup cooked and chopped portabella mushroom
1 tsp chopped thyme
1 tsp chopped rosemary
1 clove garlic minced
1 tsp salt
1 tsp black pepper

Mix all the ingredients together and form a hamburger patty shape, grill or saute  about 3 minutes per side .

Caribbean Sweet Potato Salad


Ingredients:
1 cup diced cooked sweet potato
1/2 cup diced fresh pineapple
1/4 cup diced red pepper
1/4 cup diced red onion
1 tablespoon cilantro
2 oz lime juice
2 oz honey
2 oz grape seed oil
1 tablespoon Caribbean jerk spice
Salt and pepper to taste

Mix all ingredients together and serve cold.
