Need an excuse to have a special treat on Wednesday? It's National Peanut Butter Cookie Day.
Cookies from Home is giving us their nutty recipes for their signature Peanut N' Butter Cookies and for Corey's Sustained No Bake Energy Cookie Balls.
The energy cookies are made from peanut butter and oats and are a great healthy alternative, filled with electrolytes.
Corey's Peanut N' Butter Cookies
1 1/2 cups Peanut Butter
1 1/4 cups packed light brown sugar
1/2 Cup softened unsalted butter
1 large egg
1 1/2 cups all purpose flour
1 tsp baking powder
Preheat oven to 350
Whisk together flour and baking powder
Mix Peanut butter, sugar and butter until smooth, then mix in egg. Gradually add the flour until combined
Portion a tablespoon for each cookie and roll in to a ball, Place approx. 2 inches apart on a parchment lined baking sheet. Using a fork press balls in to a criss cross pattern until they are approx. half inch.
Bake cookies to a golden brown approx. 18-22 Minutes
Corey's Sustained No Bake Energy Cookie Balls
1 cup quick-cook oats, uncooked
1/3 cup dried cranberries
1/2 cup all-natural peanut butter
3 tbsp honey
1 tsp vanilla
Mix the ingredients together in a bowl.
Scoop in to balls on a cookie sheet
Return uneaten balls to the fridge for storage.
