Firebird Tavern's sausage & ricotta spread

Get this recipe courtesy of Firebird Tavern co-owners Owen Burke and tony Piraino.

1 lb. Spicy Italian Sausage
1 lb. Ricotta Cheese
Half of an Onion diced finely
3-4 cloves Garlic diced finely
Olive Oil
8-10 slices of French Baguette

Lightly brown sausage and transfer cooked sausage to bowl
Leave any grease in the pan and add 3 oz. Olive Oil until warm
Add finely diced onions and sweat until soft and translucent; then add finely diced garlic and cook for 2 minutes
Add sausage back to the pan with onion and garlic mixture
Add ricotta and incorporate with rest of ingredients on medium low heat.
Once cheese consistency is creamy, remove from heat and portion into jars
Top with fresh arugula and plate with crostini

Slice baguette on a bias, lightly brush with olive oil and dash of kosher salt
Bake for 8 minutes or until crispy and lightly browned
