The March of Dimes is celebrating 75 years of saving babies with its 2013 Signature Chef Auction. Chefs from Metro Detroit's hottest restaurants will be cooking up their specialties on Thursday November 7, 2013 at the Henry Hotel in Dearborn. There will also be a silent auction.

Components:

5.5 minute egg

Fuille de Brick

Madeira Sabayon

Button Mushrooms

Madiera Sabayon:

2ea eggs

.5# butter

2T Madeira

1/4C Chicken Stock

Froth eggs over a double boilers, Whisk in melted butter until homogenized. Season with Madeira, Chicken Stock and salt. Pour into an ISI canister and charge with 2 whipped cream charges and hold warm.
