Gingerbread truffles recipe from Four Seasons Resort Scottsdale

Lance Whipple, Executive Pastry Chef at Four Seasons Resort Scottsdale at Troon North, demonstrates how to make gingerbread truffles.

Gingerbread Truffles Recipe
Milk Chocolate 40 %    16 oz
Cream            8 oz
Cinnamon            ¼ t
Nutmeg            ¼ t
Ginger            1/4 t
Clove                1/8 t
Butter                1 oz
Molasses            1 oz

Ground Cookies        8 oz
Tempered Chocolate    8 oz

Yield 50 truffles

Put the Gingerbread cookies in a ziplock bag and use a rolling pin to crush the cookies into a fine powder.

Place the Chocolate in a medium bowl. In a small pot heat the cream with the spices. Bring to a boil and pour into the chocolate.  Allow the chocolate to melt and mix the chocolate together to create an emulsion.  Add the Butter and Molasses and mix.  Allow the ganache to set up until is firm enough to pipe or scoop the ganache into desired size.  Chill again if necessary.  Dip each chocolate into the tempered chocolate and roll in the ground gingerbread powder
