Impressive new menu at Philips Arena

If you're planning to catch the game you'll want to bring more than your appetite for good basketball. This year the menu at Philips Arena is a slam dunk!

Philips Arena – Blackened Strip Steak Sandwich
Strip Steak Sandwich

Ingredients

• 1 oz. rosemary

• 1 oz. thyme

• 2 1/2 oz. kosher salt

• 1/2 oz. black pepper

• 4 oz. garlic, minced

• 4 oz. olive oil

• 1/2 teaspoon blackening seasoning

• 1 oz. steak sauce

• 1 tablespoon cooking oil

• 1 1/2 Tobacco Onions (recipe below)

Directions

Roughly chop rosemary, thyme and garlic. Combine with olive oil in a food processor until finely chopped. Mix in salt and paper. Spread herb mixture on baking sheet and heat in oven at 300 degrees for 15 minutes.

Rub strip loin with olive oil, and then rub with herb mix to create crust. Cook in oven at 350 degrees for one hour, until the internal temperature is 120 degrees. Slice loin into six to eight ounce portions.

In sauté pan, add oil over medium-high heat. Season the strip loin with blackening seasoning. Sear strip loin slices for 30 to 45 seconds on each side. Toast the hoagie roll, top with steak, sauce and fried onions.

Fried Tobacco Onions

Ingredients

• 1 yellow onion

• 1 cup milk

• 1 tablespoon liquid smoke

• 1 oz. Tabasco sauce

• 1 1/2 tablespoon kosher salt

• 1 teaspoon black pepper

• 4 oz. flour

• 2 cups cooking oil

Directions

Combine milk, Tabasco sauce and liquid smoke in mixing bowl. Separate onion rings and soak in mixture for at least one hour. Take onion rings out of mixture and drain thoroughly. Toss onion rings in mixture of flour, salt and pepper. Heat oil to 350 degrees and fry onion rings until golden brown.
