Game Day Chicken Satay
8 chicken tenderloins
2 tsp yellow curry powder
2 tsp kosher salt
2 tsp olive oil
Wooden skewers soaked in water
1/2 cup almond butter
5 Tbsp ponzu
1 Tbsp mint leaves, chopped
For the satay: In a shallow dish combine the chicken, curry, salt and oil together. Mix well and allow to marinate for at least 2 hours.
Heat a grill pan to medium high heat. Thread the wooden skewers through each of the chicken tenderloins and place onto the grill.
Cook on each side of the chicken for 2 minutes.
For the sauce: combine all of the ingredients together and serve cold.
Game Day Asiago Fondue
½ clove garlic minced
½ cup dry white wine
6 oz asiago cheese, finely grated
4 ox fontina cheese, finely grated
1 Thai bird chile, sliced in half
½ squeeze of freshly lemon
Heat a sauce pan to medium heat and add the garlic and the wine. When the wine is just staring to bubble, add the cheese and reduce the heat to low.
Stir continuously until all of the cheese is fully melted and add the remaining ingredients. Serve with fresh bread and meats.
