Johnny DeCarlo's got some major meatballs ready for the big day: Super Bowl Sunday.
"This is the biggest day of my meatball career," he said. "I got 1,000 meatballs ready to go."
This self-proclaimed "Meatball King of New Jersey" will be vending his eats at the Meadowlands tailgate party.
"I made it a goal for myself dating back to the summertime that if I wanted to consider myself a big player in the traveling food concession business, I had to be set up somewhere on this day," he said. "If I can't sell every last ball that day, I don't belong in the streets."
Johnny typically cooks in a commercial kitchen, but he gave Fox 5 a meatball demonstration in his home in Wood-Ridge.
"I get them nice and crusty on all sides as you could see," he said. "I fry 'em up the old school way, just like my mother and grandmother did every Sunday. … When that's done it goes into the pot of the sauce which in turn becomes the gravy."
After Johnny cooks his meatballs in his Sunday gravy, he puts them into this silver tray and then puts them into his food cart.
Johnny hopes to clean up on Sunday. He is charging $9 for a roll with three meatballs, sauce and ricotta. And for the west coasters, Johnny said his goods will give them a true taste of Jersey.
"One thing in my business that I take pride in is I'm New Jersey Italian," he said. "My tomatoes for the sauce it's from New Jersey-grown and I work with Frankie Antipast, who's my sidekick who has all the Italian cold cuts, so you're getting the full experience of Italian Jersey right here."
The Meadowlands tailgate party will be on Park Avenue in East Rutherford on Sunday, February 2.
