ROJO MEXICAN BISTRO
CAMARONES DIABLO


1oz Oil
1/4 Cup Diced Onions
15ea 31-40 Shrimp
1/4 Tsp Pepper
1/2 Tsp Salt
1/4 Tsp Oregano
2oz Diablo Sauce
1/4 Cup Diced Tomatoes
1 TBSP Cilantro
1/4 Avocado-Sliced


Directions:
Heat oil , sautée garlic and onions. Add shrimp Until it starts to turn pink and onions are translucent. Deglaze with white wine, and let reduce.  add ranchero, and habanero, finish with butter and cilantro plate and top with fresh avocado slices. Serve with Rice and Beans


Diablo sauce (combination of Ranchero & Habanero sauces)
 
ranchero sauce directions:
Roast tomatoes, onions and garlic, in oil until fragrant, add water , and simmer for a few hours, until flavors meld, purée, add cilantro.

habanero sauce directions:
roast peppers with onions and garlic, add water, simmer & reduce, add vinegar and lemon
