Healthy Energy Bars

Paulette Lambert from the California Health and Longevity Institute at the Four Seasons in Westlake Village visits Good Day L.A. Inspired by the athletes at the Olympics, Paulette shows Lisa Breckenridge and Marla Tellez how to make healthy energy bars.

DATE ALMOND ENERGY BARS

A healthier alternative to store brought bars, these energy bars are chock full of healthy ingredients like olive oil, oatmeal, almond butter and nuts! 

Ingredients:

  • 1¼ cups quick cooking oats
  • 3 Tbsp. whole wheat flour
  • ⅓ cup wheat germ (can substitute with oat bran or ground flax seeds)
  • ½ cup almond slivers
  • ½ tsp. cinnamon
  • ½ tsp. sea salt
  • 1 cup dried dates, pitted, chopped (can substitute with dried cherries)
  • ¼ cup honey
  • ¼ cup olive oil
  • ¼ cup almond butter
  • ¼ tsp. almond extract
  • ½ tsp. orange zest

Directions:

  1. Preheat oven to 350° F.
  2. Line an 8 x 8-inch pan with parchment paper.
  3. In a large bowl, mix together the oats, flour, wheat germ, almonds, cinnamon and salt.  Mix in the dates.
  4. In another bowl, thoroughly whisk the honey, olive oil, almond butter, almond extract and zest.
  5. Pour the wet ingredients into the dry and mix well.
  6. Spread the batter into the prepared pan, pack firmly into pan.
  7. Bake for 20-25 minutes until brown at the edges.
  8. Cool bars on a rack.  Once cooled remove from pan.  Cut into 16 squares.  Enjoy.

Serves: 12 (2-inch squares)
