WJBK - Homemade Peeps

Ingredients:
Large marshmallows from whole foods market (they are usually square in shape)
Candy sticks
Pastel colored sprinkles (found in the baking aisle)
Water
Piece of floral foam or Styrofoam

Directions
Place sticks in marshmallows to turn them into marshmallow pops.
Dip each in water to dampen and dab lightly on a paper towel to remove excess water.
Roll each in sprinkles, covering evenly.
Place sticks in floral foam, standing upright to dry. When dry, place in a cup for easy enjoyment or use in your Easter peep smores!

Easter Peep S’mores
yield 6

Ingredients
12  large graham crackers ( I like the fun & fat ones Zingermans make)
1c. white chocolate chunks or chips
12  homemade peep ,marshmallow ( see peep recipe)
Easter color sprinkles & décor

Directions
Dip bottom side of graham crackers in melted white chocolate; arrange 2 marshmallows and sandwich dipped sides facing each other.  Let cool in fridge or cool place until chocolate is set
Take peep s’more sandwich and dip on end into white chocolate and then dip in colored sugars and or sprinkles.
Lets set and serve or package for ester favor or basket gift

Easter Cake Ball Mix

1    box Vanilla Cake Mix
8oz. cream cheese, softened
2c.  confectioner's sugar
4T   butter
1T   milk (or more, as necessary)
12oz bag of white chocolate or colored chocolate disks (found at Michael’s)
Colored Sugar and Sprinkles
*You could also substitute your favorite buttercream or frosting recipe, or use store-bought frosting.

Directions
Bake the cake and let it cool completely on a rack. When it is completely cool, break the cake into a large bowl. Crumble it with a fork or your fingers until it is in fine crumbs.
(This could also be done in a mixer with a paddle attachment.)
In a separate bowl, whip the cream cheese, butter, powdered sugar, and milk together until smooth. Pour into the cake crumbs and mix with a spoon. Then continue mixing with your fingers, kneading and mixing until fully incorporated into the cake. Check to see if it will roll into a ball. Add more frosting/buttercream if needed. When the mix is completely done, cover with plastic wrap and refrigerate until firm. You can leave the mix refrigerated or placed in the freezer for several days at this point.

How to make the balls

Prepare two baking sheets by covering with wax paper or parchment. Using a small ice cream scoop or tablespoon, scoop portions of the cake mixture and roll it into a smooth ball. If you want to use lollipop sticks, stick one into the end of each ball, pointing upward, as you put the ball back down on the sheet. Repeat until you've used up all the mixture. As each sheet fills up, put it in the freezer so that the balls harden.
While the cake balls are freezing, melt chocolate either in a double boiler or in a microwave safe bowl in short bursts in the microwave. Once cake balls are firm, dip each one in the melted chocolate and let sit up on a parchment lined tray, sprinkle with colored sugar or desired Easter sprinkles.
