Chef Ronnie Woo: Quick Lunches & Dinners

During the summer, you want to spend more time outside and less time in the kitchen, private chef and owner of the ‘Delicious Cook’, Ronnie Woo is here with quick lunch and dinner ideas.

Chef Ronnie Woo is executive chef and owner of The Delicious Cook, a private chef company specializing in intimate 4-Star Dinner Parties. With summer in full swing, and the hot sunny days, Ronnie gave us his favorite recipes for Quick Dinners and Even Quicker Lunches: These are the perfect for a weeknight meal because not only do they come together in a cinch, they also make for a perfect lunch-to-go the next day!


Thai Beef Bowls with Jasmine Rice: If you like Asian-inspired dishes you will love this one. I like to use the best ground meat I can find if I don’t have time to grind up my own. In addition, you can make an even lighter version of this by substituting the ground beef for ground chicken.

Lamb & Feta Meatballs with Cucumber-Dill Sauce: This is another super easy and satisfying dinner-to-lunch idea. The hearty meatball pairs beautifully with the refreshing cucumber-dill sauce. They can easily be frozen which makes for a super quick and delicious meal anytime of the day.


Marinated Shishito Peppers: These are one of my absolute favorite sides. It’s colorful and easy to put together and every once in a while you get a spicy pepper!

Baby Broccoli with Honey, Garlic, & Feta: This is a fun and scrumptious way to get that broccoli into your diet! The combination of salty, sweet, and garlicky is the best!


Half N’ Half Apple Pie Bars & Strawberry Jam-Chocolate Shortbread Bars: I love making these half n’ half bars because by having two different flavors, you get to have two options without having to do much more!
