BBQ Spiced Shrimp recipe, Art of Detroit Friday at Saks Fifth Avenue

(WJBK) - A special celebration of the Motor City will be the focus when Saks Fifth Avenue in Troy presents The Art of Detroit. Saks Troy will be transformed into a "virtual" Detroit with multi-level displays of iconic locations along with fashion, live music, food and drink all designed to highlight Detroit's gems.    

The event features food, fashion and live music. It is Friday, August 22, 2014

It benefits the College for Creative Studies. Tickets are $75.

Ten Detroit-area restaurants will be at the event.

BBQ Spiced Shrimp, Zucchini, Corn & Mango Salad
Serves 4

Salad ingredients
1 1/2 pounds Zucchini
1 1/4 teaspoons Kosher salt
1 cup fresh corn roasted (cut from 2 ears)
2 tablespoons fresh lime juice
1/4 teaspoon black pepper
1/4 cup extra-virgin olive oil
1 1/2 cups diced mango
1/8 cup thinly sliced fresh cilantro


Method
 - Working with one zucchini at a time, cut lengthwise into very thin (julienne) strips with slicer, turning zucchini and avoiding core. Core can be frozen for later use.
 - Toss zucchini strips with 1 teaspoon salt and let drain in a colander set over a bowl, covered and chilled, one hour.
 - Gently squeeze handfuls of zucchini to remove excess water and pat dry with paper towels.
 - Whisk together lime, juice, pepper, and remaining 1/4 teaspoon salt in a large bowl, then add oil in a slow stream, whisking.
 - Add zucchini, corn, mangos, and some cilantro and toss well. Set aside until shrimp are done


Shrimp ingredients
1 tablespoon chili powder
1/2 teaspoon granulated garlic  
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon granulated onion
1 1/2 pounds medium shrimp, peeled and deveined


Method
 - Combine ingredients in a large bowl. Add shrimp; toss to coat.
 - Preheat BBQ grill to medium heat and place shrimp on grates, cooking 3-4 minutes on each side. Remove from grill.
 - On serving platter, place salad in center and top with grilled shrimp. Sprinkle with cilantro to garnish and serve either immediately or chill well-chilled.
